Chinese Chicken Lettuce Wraps
Serves 2-3
I have been majorly craving chinese food and lettuce wraps recently. Instead of going to PF Changs, I decided to make my own. And I'm very glad I did. These came out awesome!
Ingredients
1 pound ground chicken
2 cups chopped mushrooms
1 cup diced bamboo shoots
1 cup chopped onions
1 TBSP minced garlic (or about 4 cloves chopped/diced)
2 TBSP olive oil, separated
2 TBSP coconut aminos, separated
1 TBSP chinese five spice
1 head lettuce
Directions
1. Heat large saute pan to medium-high heat with 1 TBSP oil. Add mushrooms, bamboo shoots, onions, and garlic and saute.
2. After about 5 minutes, add 1 TBSP coconut aminos, stir, and cook for another 5 minutes.
3. Remove vegetables from pan and set aside.
4. Turn heat down to medium and add 1 TBSP olive oil and then ground chicken.
5. Cook chicken and make sure to break up into a mince.
6. Once chicken is cooked, add 1 TBSP coconut aminos, 1 TBSP chinese five spice, and cook for another 2-3 minutes.
7. Add vegetables back to chicken mixture and combine everything. Cooking for about another 2-3 minutes.
8. Remove from heat, fill lettuce leaves, and enjoy!
