Creamy Coconut Beef, Broccoli, and Baby Scallop Skillet
Serves 3

Ingredients
1/2 pound ground beef (or gound sausage)
1/2 pound baby scallops
2 bags EatSmart Broccoli (or 1.5 pound broccoli florets)
1 can (full fat) coconut milk
1-2 TBSP garlic powder
1-2 TBSP onion powder
2 TBSP olive oil

Directions
1. Place broccoli in microwave to steam. Set aside when done.
2. Heat large skillet to medium heat with 1 TBSP olive oil. Add ground meat and cook until halfway done.
3. Add 1 more TBSP olive oil, scallops, broccoli, and spices to skillet. Mix well to combine. Cook for about 3 minutes, stirring often.
4. Add 1 can coconut milk, stir to combine.
5. Cover skillet and turn off heat (leaving skillet on the same hot burner, but with heat off and top on).
6. Let steam/cook for another 5 minutes.
7. Remove cover, stir, serve, and enjoy!
