Sausage and Peppers

Sausage and Peppers
Serves 4Ingredients
1.5 pounds sausage, cut into pieces (Carlo's Sausage)
6 bell peppers (3 yellow, 3 orange), sliced
3 onions (2 yellow, 1 red), sliced
3 cups Mario Batali Arrabiata Pasta Sauce
Olive Oil

Directions
1. Preheat oven to 400
2. Add sausage, onions, and olive oil to a large glass baking dish and cook until onions are softened and begin to caramelize


3. Add peppers and cook until peppers soften and begin to caramelize


4. Add sauce and cook until brown and bubbling
*Whole cooking process takes about 2-3 hours
Serve over steamed broccoli or salad

Oven Roasted Carrots

Oven Roasted Carrots with Rosemary
Serves 2-3


Ingredients
2 pounds carrots (baby carrots, carrot coins, carrot sticks, etc.)
Rosemary
Garlic Powder
Onion Powder
2 TBSP Olive Oil
Parmesan Cheese (optional)

Directions
1. Preheat oven to 450 degrees
2. Place carrots in large glass baking/casserole dish
3. Pour olive oil over carrots. Sprinkle rosemary, garlic powder, and onion powder over carrots.
4. Mix well with hands!
5. Roast for 45 minutes. Make sure to stir the mixture once or twice throughout cooking.
*Cooking time will vary depending on the type of carrots used

My family loves these. They come out tasting like sweet potato fries!
