Bangin' Stuffed Peppers

Beef and Buffalo Stuffed Peppers
Serves 2

Ingredients
1/3 pound ground beef
1/3 pound ground buffalo
3 TBSP olive oil (separated)
1 large red onion, sliced
1 package (8 oz) sliced baby bella mushrooms
2 large yellow bell peppers
1 bag frozen broccoli (steamfresh brand works well)
1 cup favorite salsa
Handful of chopped peppers (can buy a frozen mix of peppers, onions, celery, etc.)

Directions
1. Heat two large skillets, both to medium to medium high heat. Add 1 TBSP olive oil to each skillet.
2. In one skillet, add sliced onions. In the other skillet, add ground beef and buffalo.3. Once beef is cooked, add 1 cup salsa and heat through. Remove from heat.4. Once onions are caramelized, add 1 TBSP olive oil and mushrooms to skillet.
5. Once onions are cooked, add rest of veggies and cook for about one more minute (make sure you have microwaved the broccoli first).6. Add beef to vegetables, and cook until reheated through and well combined.7. Stuff peppers with mixture
8. Place in broiler for approximately 8 minutes.
(Note - If all of the filling doesn't fit, just enjoy on the side. You can place it in the dish and broil it if you would like it crispier, or just ear it straight from the skillet.)

Coconut Caribbean Jerk Roasted Brussels Sprouts

Brussels Sprouts Roasted in Coconut Oil and Caribbean Jerk Seasoning
Serves 1 as a side dish

Ingredients
1 large bag Steamfresh Brussels Sprouts
1 TBSP Extra Virgin Coconut Oil
McCormick Caribbean Jerk Seasoning

Directions
1. Microwave veggies for 5 minutes in bag
2. Remove from bag and cut each brussel sprout in half
3. Mix in 1 TBSP coconut oil
4. Pour on as much seasoning as you would like and mix together
5. Place brussels sprouts on baking sheet covered with tin foil
6. Broil at 500 degrees for about 10 minutes or until they reach the burnt/crispness you like
